100% Merlot. Clay and limestone. Biodynamic since 2000, double guyot pruning, spontaneous winter grassing, and tillage in spring. Treatments combining Bordeaux mixture in small quantities with herbal teas such as horsetail and nettle. Fermentation with indigenous yeasts from the estate, wine removed early from its pomace to avoid extracting any aggressive tannins. Bottled after a short aging period for one winter. Total So2: 25mg/l. Bottled in fruit day of the biodynamic calendar. Unfiltered, unfined. Around 6000 bottles. A nod to Merlot…. and the holidays! A fruity and delicious wine.
