The perfect example of what harmony, terroir, volcanic soil, and organically grown, healthy grapes can create together. Vinification happened in Inox (stainless steel) tanks, followed by an 8-month maturation in the same vessels on fine lees. A bouquet of fresh cut grass, crispy green apple, and wildflowers followed by a minty, cool herbal touch, Meyer lemon, lime, and a big pinch of white pepper on the palate. Vibrant acidity with a long-lasting, smoky-salty finish. Spicy Thai curry with jasmine rice is the winning dish for this wine; in our opinion, the salt and the acidity of the Riesling go splendidly with any dish that has a little bit of heat and charisma.
