In technical terms the only difference between an ale and a lager is the use of different yeasts – more specifically, ales are brewed with strains of Saccharomyces cerevisiae while lagers are made using strains of Saccharomyces pastorianus. All other differences stem from this one decision – which yeast is used to ferment! Whether you prefer lagers (brewed with bottom-fermenting yeasts at colder temperatures with longer maturation) OR ales (brewed at warmer temperatures using top-fermenting yeasts and don’t require a long maturation period), the NLC has you covered.
